Ingredients:

  • Whole wheat tortilla or equivalent
  • 1 avocado sliced thin
  • 1 cup cooked quinoa
  • 1 diced Roma tomato
  • 1 cup spinach
  • ¾ teaspoon lemon pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • Salsa Verde as desired

Directions:

  • Sauté quinoa, tomato, spinach, and spices together until warm with a teaspoon of olive oil or coconut oil.
  • Heat tortilla up in a separate pan.
  • Fill tortilla with quinoa mixture and top with sliced avocado and salsa verde.
  • Burrito fold and enjoy!
