- Heat olive oil in medium pot over medium heat, lightly sauté the leeks, carrots, and celery. Add the rice, herbs, and salt and stir to combine.
- Add the water and bring to a boil. Cover and reduce to a simmer for 30 minutes until rice is tender.
- When rice is done, add goji berries and walnuts, fluff, and serve with a sprinkle of fresh parsley.
