Mmmmm imagine your kids waking you up wanting you to make them these delicious pancakes! You don’t have to tell them that it’s vegan though 🙂

  • Ingredients:
  • 1/4c ground chia seeds
  • scant 1/4 ground flax seeds
  • 3T Spectrum Canola/Olive Oil
  • 2 eggs
  • 1 1/4c Bob’s Red Mill Gluten Free Flour
  • 3/4c Almond Milk, or Silk Soy Milk or Regular Milk
  • 1/2tsp vanilla
  • 1/2 tsp Cinnamon optional


Combine Almond, Silk Soy Milk or Regular Milk, eggs, oil and vanilla. Blend. Add GF flour, ground chia and flaxseeds. Mix till smooth. Pour into waffle iron.

For pancakes use 1/2c liquid. Add blueberries or other fruit to batter, if desired.

Please note: Batter thickens as it rests due to the chia and flaxseeds. If it becomes too thick, simply add a little more liquid. Waffles and pancakes are filling, rich in Omega 3’s and fiber. For lighter results, add a little more liquid.
